The Big Breakfast Pizza

Ingredients:

6 bacon rashers

2 pork sausages – casings removed

100 g brown mushrooms, sliced

2 large wholemeal pita breads or pizza bases

½ cup (125 ml) pizza tomato paste

1 cup pizza blend grated cheese

60 g pkt baby spinach

100 g cherry tomatoes

6 eggs

Baby rocket leaves, to serve

Method:

Preheat oven to 200°C. Heat a large non-stick frying pan over medium-high heat. Cook the bacon for 2 minutes each side or until golden brown. Transfer to a plate lined with paper towel. Add the sausage to the pan and cook, stirring with a wooden spoon to break up into lumps, for 5 minutes or until golden. Transfer to the plate with the bacon. Add mushroom to the pan and cook, stirring, for 1-2 minutes or until just tender.

Lightly grease 2 large baking trays. Place the pita breads or pizza bases on the prepared trays. Spread evenly with the pizza tomato paste. Sprinkle with half the pizza cheese and top with the spinach, bacon, sausage, mushroom and tomatoes. Sprinkle with the remaining cheese. Crack 3 eggs onto each pizza.

Bake for 12-15 minutes or until the cheese melts and the bases are crisp. Sprinkle the pizzas with rocket and cut into wedges to serve.
