Ingredients:-
Pudding:-
½ cup brown sugar,
1 cup raisins,
1 cup wholemeal or plain flour,
1 large Tbsp butter,
1 tsp spice (cinnamon),
1 ½ cups milk,
1 large cup of wholemeal or plain flour,
1 tsp baking soda,
Custard:-
1/4 cup custard powder,
2 1/2 cups (625ml) milk,
2 Tbsp caster sugar,
METHOD:-
Pudding:-
Boil all ingredients together. When boiling stir in 1 tsp baking soda.
Sift into this mixture, while hot, 1 large cup of wholemeal or plain flour.
Steam for ½ an hour in a basin with no lid.
Custard:-
Combine custard powder and 1/4 cup of the milk in a small jug. Stir until smooth.
Place custard mixture, sugar, and remaining milk in a small saucepan over med-low heat, stirring constantly until custard comes to the boil and thickens. Simmer, stirring for 1 min.
Place slightly cooled steamed pudding on a serving platter, and pour custard into a serving jug and serve.
