Caramel Banana Steamed Pudding (Karamere Panana Steamed Pudding)

Ingredients:- 
Pudding: -
Prep time: 10min.
Cook time: 35min baking / 2 hours steamed,
90g butter, softened,
1 cup pure maple syrup,
1 egg yolk,
1 egg,
3 bananas, mashed, 
1 1/4 cup self-raising flour,
1 tsp baking powder,
1 tsp ground cinnamon,
1/3 cup milk,
Caramel Sauce:-
1 cup pure maple syrup,
1 cup cream,
100g butter,
METHOD:-
If steaming, grease a 1.25 Ltr,16cm round ovenproof dish. for baking. Preheat the oven to 180 degrees on fan bake. 
Combine ingredients in a small saucepan, stir overheat, without boiling. Reduce heat, simmer, stirring, about 3 mins or until thickened slightly. Pour half the sauce into the dish. Save the rest to pour over when you’re ready to serve.
In a large bowl beat butter, syrup and yolk with an electric mixer until light and fluffy. Beat in egg, stir in mashed banana, then add sifted dry ingredients and milk. Spoon mixture into dish.
If steaming - boil 4 cups of water in a large pot. Place baking paper then tin foil over the top of the baking dish, leaving 3 inches around each side to have room to tie a thin rope around to keep the steam and water out. Leave extra rope around the centre to use as a handle. 
Place the steamer basket in a large pot. Carefully place the dish into the basket in the pot. Top up the pot with extra hot water until it reaches halfway up the dish. 
Secure with a lid and boil water on medium heat for 2 hours. Make sure to keep topping up the water every 30 mins to ensure its halfway up the side of the dish. 
Once cooked, allow to rest for 10mins and serve warm with cream, ice cream or custard.
