
'Celebrating Matariki with a Favourite Pudding’
Ingredients:
1 cup flour
1 tsp baking soda
½ cup sugar
1 Tbsp golden syrup
1 Tbsp butter, melted
½ cup milk
1 tsp vanilla extract
1 cup dried fruit (optional)
Extra golden syrup to drizzle over top of pudding
Cream, for serving
Fruit, for serving
Method:
In a bowl, sift together the flour and baking soda. Add sugar, golden syrup, melted butter, and vanilla extract. Gradually mix in the milk to form a smooth batter. If your using dried fruit, fold in.
Grease a pudding basin. Pour the batter into the basin and cover it with a tightly fitting lid or tinfoil. Place the basin in a large pot with enough water to come halfway up the sides of the bowl. Steam on low heat for 2 to 3 hours, checking the water level occasionally.
Once cooked, turn the pudding out onto a plate and warm, extra golden syrup and drizzle over the top, serve with custard, cream and fruits.
