
‘Celebrate Matariki with an Oven Hangi’
Ingredients:
4 chicken pieces (or lamb/pork pieces)
2 large potatoes, peeled and sliced
2 large kumaras, peeled and sliced
2 large pieces of pumpkin peeled and sliced
1/2 cabbage, chopped
2 onions, sliced
1 tsp smoked paprika in each foil container (for a smoky flavour),
Salt and pepper to taste
Optional: stuffing balls (using your favourite stuffing recipe)
4 x foil containers
METHOD:
Preheat oven to 180°C.
Prepare foil containers: Line each with a layer of cabbage leaves (this helps steam the food and adds flavour).
Start with vegetables (potatoes, kumaras, pumpkin).
Add onion slices.
Place a piece of meat on top.
Add stuffing if using.
Season with salt, pepper, and smoked paprika.
Drizzle 1–2 Tbsp of water or chicken stock into each container.
Cover each container with foil, sealing the edges well to trap steam.
Place containers on a baking tray.
Bake for 2 to 2.5 hours until meat is tender, and vegetables are soft.
Carefully open the foil (watch for steam).
Serve hot with bread or fry bread on the side.
