Ingredients:-
500g mussels, scrubbed and debearded,
1 cup fish stock or water,
1/2 cup olive oil,
2 limes, finely grated rind and juice of,
1 Tbsp white wine vinegar,
1 Tbsp snipped chives,
1 garlic clove, crushed,
1 tsp seeded mustard,
1 small cucumber,
¼ capsicum, finely chopped,
1 small red onion, finely chopped,
1 small tomato, finely chopped
METHOD
Place mussels in a saucepan with stock. Bring to boil, covered. Cook for 2-3 mins, until mussels open.
Remove top shell of each mussel and discard. Arrange mussels on a platter.
Whisk together oil, rind and juice, vinegar, chives, garlic and mustard, then season to taste.
Drizzle over mussels before serving warm or cold.
