
'Matariki is the maori name for the cluster of stars also known as the Pleiades'
Ingredients:
1 dozen mussels
1 egg
1 Tbsp flour
1/4 tsp baking soda
Salt and pepper, to taste
2 Tbsp parsley or coriander, chopped
Olive oil for shallow frying
Parsley for garnish
Lemon wedges, to serve
METHOD:
In an open pan add mussels and pour over enough hot water to steam them open.
Remove the mussels from their shells and clean, then chop finely.
Using a fork, whisk together the egg, flour, baking soda, salt and pepper to taste, then the herbs.
Add the mixture to the chopped mussels and mix, then chill for an hour.
Heat the oil gently in a heavy-based frying pan and fry large Tablespoons of the mixture until golden brown, then turn over & repeat.
Drain on paper towels and serve with parsley and lemon wedges.
