Ingredients:
1 dozen mussels
1 egg
1 Tbsp flour
1/4 tsp baking soda
Salt and pepper, to taste
2 Tbsp parsley or coriander, chopped
Olive oil for shallow frying
Parsley for garnish
Lemon wedges, to serve
METHOD:
Pour hot water over the mussels to open or steam them in an open pan with a little water. Remove from their shells and clean, then chop finely.
Using a fork, whisk together the egg, flour, baking soda, salt and pepper to taste, then the herbs.
Add the mixture to the chopped mussels and mix, then chill for an hour.
Heat the oil gently in a heavy-based frying pan and fry large Tablespoons of the mixture until golden brown, then turn over & repeat.
Drain on paper towels and serve with parsley and lemon wedges.
