Ingredients
100g butter (softened)
½ cup sugar
1 egg
1 cup flour (plain)
1 tsp baking powder
½ cup milk
1 tsp vanilla essence
2–3 Tbsp golden syrup for the base
To Serve - cream & custard

METHOD:
Prepare the bowl:
Grease a 1-1/2 litre pudding bowl/basin.
Pour the golden syrup, into the bottom of the basin.
Make the batter:
Cream the butter and sugar together until pale and fluffy.
Beat in egg and vanilla.
In a separate bowl, mix flour and baking powder.
Add dry ingredients to the creamed mixture, alternating with the milk.
Mix lightly, stop as soon as it’s combined.
Steam the pudding:
Spoon the batter into the pudding bowl/basin.
Cover with baking paper and foil or lid, sealing tightly.
Place basin into a large pot.
Fill the pot with boiling water halfway up the sides of the bowl/basin.
Cover the pot and steam for 1½ hours, topping up with boiling water if needed.
Carefully remove the bowl/basin, rest for 5 mins, then turn out onto a plate.
Serve with fresh fruit, custard and whipped cream.
