Ingredients
1 cup flour
1 teaspoon of baking powder
1 egg
2 Tablespoons butter, melted
½ cup sugar
½ cup milk
2 Tablespoons golden syrup (for the batter)
Golden Syrup Topping - ½ cup golden syrup
METHOD:
Lightly grease a pudding bowl and pour the ½ cup golden syrup into the bottom.
In a mixing bowl, combine the flour and baking powder.
Add the egg, melted butter, sugar, milk, and 2 tablespoons golden syrup. Mix until a smooth batter forms.
Pour the batter gently over the golden syrup in the pudding bowl.
Cover the bowl securely with baking paper and foil.
Steam for 1½ hours - 2 hours, checking the water level occasionally and topping up with boiling water if required.
Carefully remove the pudding from the bowl onto a serving plate. The warm golden syrup will run over the pudding, creating a rich caramel glaze.
Serve warm with custard and fresh berries, berry coulis or seasonal fruit.
To steam this pudding, you'll need a large pot or deep saucepan with a lid.
Method for Steaming:
Place a small, upturned saucer or trivet in the bottom of the pot. This stops the pudding bowl from sitting directly on the hot base.
Put your covered pudding bowl on top of the saucer/trivet.
Pour boiling water into the pot until it comes about halfway up the sides of the pudding bowl.
Put the lid on the pot and bring the water to a gentle simmer.
Steam for 1½ to 2 hours:
Keep the water at a gentle simmer, not a rolling boil.
Check every 30–40 minutes and top up with boiling water if the level drops.
Never let the pot boil dry.
