Ingredients
100g butter (softened)
½ cup sugar
1 egg
1 cup flour (plain)
1 tsp baking powder
½ cup milk
1 tsp vanilla essence
2–3 Tbsp golden syrup for the base
To Serve - Custard, whipped cream, and or caramel Sauce

METHOD:
Prepare the bowl:
Grease a 1 - 1 1/2 litre pudding bowl/basin.
Pour the golden syrup into the bottom of the basin/bowl
Make the batter:
Cream the butter and sugar together until pale and fluffy.
Beat in the egg and vanilla essence.
In a separate bowl, mix the flour and baking powder.
Add the dry ingredients to the creamed mixture, alternating with the milk.
Mix gently until just combined.
Steam the pudding:
Spoon the batter into the prepared pudding bowl/basin.
Cover tightly with baking paper and foil or a well-fitting lid, sealing tightly.
Place the basin into a large pot.
Add enough boiling water to reach halfway up the sides of the basin/bowl.
Cover the pot and steam for 1½ hours, topping up with boiling water as needed.
Carefully remove the basin/bowl from the pot and allow it to rest for 5 minutes before turning out onto a serving plate.
Serve warm with caramel sauce, custard and whipped cream.
Decorate with fresh berries and festive Christmas decorations if desired.
