Paua Soup – (Hupa Paua)
Ingredients:-
2 small onions,
Minced paua,
Dab butter,
1 carrot,
1 potato,
1 celery stick,
1.2Lt milk,
Salt and pepper, to taste,
METHOD:-
Boil celery til tender, fry onion with a dab of butter, fry til golden brown.
Grate carrot and potato, Heat half of the milk, when skin forms add all of the ingredients except minced paua, bring to the boil then add minced paua.
Simmer for 5 mins, then serve with grated chilli and a fried bread in the middle or garnishes of your choice.
