“A Favourite Food Over Matariki – On its Own or with Any Matariki Dish’
Ingredients:
6 cobs of corn, remove the cover, strings from the corn, clean, cut the husks off
Salt and pepper to taste
Butter for serving
METHOD:
Remove the husks and silk from the corn before cooking. If your pot is not big enough break the cobs in half.
Fill a large pot, half full of water. Place the corn in the water. Cover the pot with a lid and bring the water to a boil over high heat. I usually boil the corn for around 15 mins.
Once the water is boiling, remove the lid and boil a further 2 mins.
Remove pot from the heat, and let it stand uncovered for 10 mins. Drain the water and serve the corn immediately.
Serve with lashings of butter and season with salt.
