
Ingredients:
10 medium slices of bread
Butter – as needed
Cos lettuce
½ cup mayonnaise
½ cup plain unsweetened Greek yoghurt
¼ cup mango chutney
1 ½ Tbsp mild curry powder
½ lemon – juice only
Salt and pepper
2 packed cups cooked rotisserie chicken
2 medium spring onions – finely diced
1 Tbsp finely diced fresh coriander
1 stick celery, chopped
Pinch cayenne pepper - optional
METHOD:
Sauce: In a small mixing bowl combine mayonnaise, yogurt, mango chutney, curry powder, lemon juice and salt & pepper to taste.
Coronation Chicken: In a larger mixing bowl add chicken, spring onion, coriander, celery and the sauce. Give it all a good stir then taste test. Add a little more chutney for a fruitier taste or for more spice add in a little more curry powder (or a pinch of cayenne pepper).
Sandwich: Butter one side of each of your slices of bread. Top half with cos lettuce, then dollop the coronation chicken on top. Place the remaining bread on top, and enjoy!
