Anzac Biscuits

Ingredients: -
1 cup rolled oats, 
1 cup plain flour, 
1 cup desiccated coconut, 
3/4 cup white sugar, 
4 Tbsp golden syrup, 
150g butter, 
1 tsp baking soda, 
METHOD: -
Preheat oven to 180°C (160°C fan-forced). 
Line 2 baking trays with baking paper.
Combine the rolled oats, flour, coconut and brown sugar in a bowl.
Place butter and golden syrup in a saucepan over med-high heat and stir until butter has melted. Add baking soda and stir, it will fizz up which is normal, immediately remove from the heat. 
Pour the butter mixture into flour and mix until it is just combined. 
Roll level, 1 Tbsp mixture into balls, flatten into a patty shape. Place 2.5cm apart on the prepared baking trays.
Bake for 15 mins, swap trays halfway through cooking or until golden.
Stand on trays for 5 mins then transfer to a wire rack to cool, they will harden as they cool. Enjoy.
