
Ingredients: (Makes 12 Muffins):
2 cups self-raising flour
1 cup grated cheese 1 cup milk
1 egg
1/4 cup vegetable oil or melted butter
1/2 cup chopped cooked bacon or ham
1/2 cup capsicum, diced
1/4 cup chopped spring onions or chives
Salt and pepper to taste
Optional Ingredients:
½ cup corn kernels
Herbs like parsley or thyme
METHOD:
Preheat oven to 180°C. Grease or line a 12-hole muffin tin.
In a large bowl, mix flour and cheese together.
In a separate bowl, whisk milk, egg, and oil until combined.
Add the wet ingredients to the dry ingredients and gently mix until just combined.
Fold in bacon/ham, vegetables, and herbs. Do not overmix.
Spoon mixture evenly into muffin tins.
Bake for 20–25 mins, or until golden and a skewer comes out clean.
Let cool slightly before serving. Enjoy warm with butter.
