Stuffed Pork Chops

Ingredients:
4 boneless pork chops (thick cut)
Salt and pepper, to taste
1 Tbsp olive oil
Stuffing:
1 cup fresh breadcrumbs
1/2 cup grated cheese, mozzarella
1/4 cup chopped spinach or parsley
1/2 cup mixed red & green capsicum, sliced
1/4 cup finely chopped onion
1 clove garlic, minced
1/4 cup cooked bacon bits or diced ham (optional)
1/4 cup chicken broth or water (to moisten)
1/2 tsp dried thyme or Italian herbs
METHOD:
Preheat oven to 180°C.
Prepare the Stuffing:
In a bowl, mix breadcrumbs, cheese, spinach, onion, capsicum, garlic, herbs, and optional bacon.
Add broth gradually until the mixture is moist but holds together.
Place each chop between two sheets of baking paper.
Pound with a meat mallet or rolling pin until about 1 cm thick.
Spoon stuffing onto one end of each flattened chop.
Roll up tightly and secure with toothpicks or kitchen string.
Heat olive oil in a pan over medium-high heat.
Brown the pork rolls on all sides (about 2–3 mins per 
Transfer to a greased or lined baking dish and cover with foil.
Bake for 25–30 mins, or until pork is cooked through (internal temp: 65°C).
Rest for 5 mins. Serve with mashed potatoes, steamed veges, or a fresh salad.
