Ingredients:-
170g Butter, room temp
1 Cup White Sugar
2 Eggs, medium
390g Plain White Flour
1 tsp Baking Soda
2 tsp Cream of Tartar
Salt, Pinch
Apple Filling - Use a pre-prepared can of Apple Pie Filling or use fresh or stewed apple.
Sugar & Ground Cinnamon
METHOD:-
Cream the butter and sugar in a food mixer until pale, approx 4 minutes.
Add eggs and blend well, then sift in the dry ingredients and combine until the dough comes away from the side of the bowl.
Preheat Oven to 180C
Prepare a pie dish with a spray lightly with cooking spray.
Knead the dough and split into two amounts.
Roll out two thirds of the dough on a well-floured board, into desired shape, use rolling pin to carefully place the dough on the prepared greased dish and gently press in, trim off excess.
Sprinkle a small amount of white sugar and cinnamon onto the dough and then spoon the apple mixture onto the base, you can also sprinkle a little more sugar and cinnamon on top.
Repeat the above steps of kneading and rolling with the remaining dough – roll and gently lay on top of the apple mixture then gently press down – trim the edges until they are tidy and pinched together.
Make a pattern or simple marks with a fork for added effect once cooked.
Cook for 25-30 minutes until golden brown on top.
Importantly we want the bottom is cooked well, if possible, use a clear glass baking dish, the bottom needs to begin to brown. If in doubt give it a few minutes longer so that it does not fall apart when you slice it.
Serve with fresh cream.
