Ingredients: -
910g stewing steak
4 Tbsp seasoned flour
30ml cooking oil
2 medium onions, slice thinly
2 medium carrots, slice thinly
2 medium tomatoes, skin and chop (optional)
1 level tsp salt
150ml water
Topping: -
1 ¾ cups self-raising flour
1 tsp salt
Butter
1 tsp parsley, finely chopped
6-8 Tbsp milk
METHOD: -
Toss meat in seasoned flour, melt butter, add vegetables and fry in oil until golden. Add meat and fry 5 mins, pour into a casserole dish and add tomatoes, salt and water.
Cover and cook in the centre of the oven for 2, 2-1/2 hours in a moderate oven.
Sift flour and salt. Rub in butter, add parsley and mix to a soft dough with milk. Roll out to a ½ inch thickness, cut into 10 rounds. Cut out center's and arrange on meat, brush with milk. Bake in oven for 20-35 mins.
Serve with fried bread or your favourite loaf and enjoy your Matariki feast.
