Ingredients:
250g plain flour
1 Tbsp baking powder
1/2 tsp salt
50g granulated sugar
115g unsalted butter, cold & cubed
180ml milk
150g fresh or frozen blueberries
METHOD:
Preheat oven to 220°C. Line a baking tray with baking paper.
In a large bowl, whisk together flour, baking powder, salt, and sugar.
Add cold butter cubes and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Pour in the milk and stir just until combined. Don’t overmix.
Fold in blueberries gently to avoid crushing them.
Drop spoonful's of dough onto the baking paper or pat the dough into a rectangle and cut into rounds or squares.
Bake for 15–18 mins, or until golden brown on top.
Cool slightly and enjoy warm. Serve with whipped cream.
