Curried Lentil with Tomato & Coconut Soup

Ingredients:
1 Tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 Tbsp fresh ginger, grated
1–2 Tbsp curry powder, to your taste
1 tsp ground coriander 
1/4 tsp chili flakes (optional)
1 cup red lentils, rinsed
400g diced tomatoes
400ml coconut milk
3 cups vegetable stock
Salt and pepper, to taste
Juice of 1 lime (optional)
Fresh parsley, chopped, for garnish
METHOD:
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft and translucent (about 5–7 mins).
Stir in garlic, ginger, curry powder, coriander, and chili flakes. Cook for 1–2 mins until fragrant.
Add red lentils, diced tomatoes, coconut milk, and vegetable stock. Stir well to combine.
Bring to a boil, then reduce heat and simmer uncovered for 25–30 mins, or until lentils are soft and soup has thickened.
Add salt, pepper, and lime juice to taste. 
Pour into bowls and garnish with fresh parsley. Serve with toast.
