Delicious Sweet Corn Fritters
Ingredients: -
410g can of creamed corn
2 eggs, beaten
2 Tbsp oil
½ cup milk
½ cup flour
1 tsp baking powder
1 small onion, peeled and finely chopped (optional)
Green onions, thinly sliced (optional)
Sour Cream or garlic aioli, for serving (optional)
METHOD: -
In a bowl, stir together the corn, eggs, oil and milk. Sift the flour and baking powder over the wet ingredients and stir to make a thickish batter. Add the onion.
Heat a knob of butter in a frying pan, when hot add large spoonful's of the mixture to the pan. Cook over a moderate heat for 3-4 minutes or until bubbles appear on the top, then flip the fritters over and cook the other side for another 3-4 minutes or until golden.
Transfer to a plate and keep warm in a low temperature oven while cooking the remaining mixture.
Serve warm, garnish the corn fritters with green onions and serve with sour cream or garlic aioli or your favourite toppings like grilled bacon, sliced tomatoes or avocados.
