‘A Delicious Addition to any Matariki Feast’
Ingredients:
2 medium potatoes, peeled and cubed
2 medium kumaras, peeled and cubed
2 Tbsp olive oil
2 Tbsp honey
1 tsp ground cinnamon (optional)
Salt and pepper to taste
Fresh herbs like thyme or rosemary (optional)
METHOD:
Preheat oven to 200°C.
In a large bowl, toss the potato and kumara cubes with olive oil, honey, salt, pepper, and cinnamon (if using).
Spread the mixture evenly on a baking tray lined with baking paper.
Bake for 35–45 mins, turning once halfway through, until golden and tender.
Garnish with fresh herbs if desired and serve warm with any Matariki dish.
