Kumara Soup

‘Celebrate Matariki Whanau with Hot Kumara Soup’

Ingredients:
2 Tbsp olive oil
1 large onion, chopped
1 tsp minced garlic
½ tsp chilli powder (optional)
2 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
4 cups vegetable or chicken stock
¾ cup red lentils
2 carrots, diced
2 celery stalks, diced
1 large kumara, peeled, diced
METHOD:
Heat olive oil in a large pot. Add onion and cook until soft. Stir in garlic, chilli, cumin, coriander, and turmeric.
Add stock and lentils. Simmer for 10 mins.
Add carrots, celery, and kumara. Simmer for another 15–20 mins until vegetables are tender.
Use a stick blender to puree half the soup for a creamy texture or leave it chunky.
Season with salt and pepper. Garnish with fresh herbs or a swirl of coconut cream if desired. Serve with Rewena bread or Fried bread.
