‘Side Dish to go with any Matariki Feast’
Ingredients|
4 cups frozen sweet corn, don’t need to thaw
2 Tbsp butter
1 Tbsp sugar or honey
½ cup cream cheese, cubed
Salt and black pepper to taste
2 Tbsp cream
METHOD:
Preheat your pan over medium heat. This helps sauté the corn instead of steaming it.
Add the frozen corn to the hot pan. Cover and cook for 5–7 mins, stirring occasionally, until heated through.
Add butter and sugar. Stir until the butter is melted and the corn is evenly coated.
Add cream cheese and stir until fully melted and mixed in well. Add the cream now.
Season with salt and pepper to taste.
Simmer for another 2–3 mins until everything is creamy and well combined.
Serve with any Matariki dish.
