
‘Delicious Maori Fried Bread a Treat During Matariki
Ingredients:
½ cup milk
1 cup hot water
2 Tbsp sugar or honey/maple syrup
2 tsp instant yeast
3⅓ cups high-grade flour
30g melted butter
1½ tsp salt
750ml oil for frying (rice bran or similar)
METHOD:
In a large bowl, mix the milk, hot water, and sugar until dissolved.
Sprinkle in the yeast, stir gently, and let sit for 5–10 mins until frothy.
Add flour, melted butter, and salt to the yeast mixture.
Mix until a rough dough forms.
Knead by hand or with a stand mixer for about 4–5 mins.
The dough should be soft and slightly stick, avoid adding too much extra flour.
Cover the dough and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Punch down the dough and divide into 18 pieces.
Shape into rounds or flat shapes.
Heat oil in a deep pan to medium-high, about 180°C.
Fry each piece for 2–3 mins per side until golden brown and puffed.
Drain on paper towels.
Serve warm with butter and jam, golden syrup, or with boil-up or hangi.
