Rewena Bread

‘Add this Bread to your Matariki Feast’
This traditional potato bread is perfect for sharing with whanau during Matariki. 

Ingredients:
3 cups plain flour
2 tsp baking powder
1 tsp salt
1 cup, cooked, mashed potato
1 Tbsp sugar
1 cup warm water, more or less
METHOD:
Preheat oven to 180°C Grease a round loaf tin or baking tray.
In a large bowl, combine flour, baking powder, salt, and sugar.
Add the mashed potato and mix until evenly distributed.
Gradually add the warm water, mixing until a soft dough forms. You may not need all the water.
Turn the dough onto a lightly floured surface and knead for approximately 5 mins or until smooth.
Shape into a round loaf and place in the prepared tin or on the baking tray. 
Bake for 35–45 mins or until golden brown and the loaf sounds hollow when tapped on the bottom.
Let the bread cool slightly before slicing. 

Serve warm with butter, honey, golden syrup, jam, or alongside a comforting bowl of stew.
