Shortbread Biscuits

Ingredients:
2 cups (250g) flour
225g (8oz) butter, softened
3/4 cup icing sugar
METHOD:
Preheat the oven to 160°C.
Beat butter until smooth. Add icing sugar and beat until combined.
Add flour gradually, beat until combined. Use your hands to form a smooth ball with the dough.
Roll out dough to 1/2-inch thickness. Cut into strips.
Prick shortbread cookies with a fork and place on ungreased baking sheets.
Bake in the preheated oven for 20-25 minutes until edges are lightly golden brown. 
Cool on the baking sheet briefly before removing to a wire rack to cool completely.
