Sliced Steak Roast

‘Matariki Fact – Matariki is one of the closest star clusters to Earth’

Ingredients:
1.5 to 2 kg eye of round roast (or top sirloin, bottom round)
2 Tbsp olive oil
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp dried thyme
1 tsp dried rosemary
Chives, chopped, for garnish
Favourite sauce, to serve
Marinade:
1/4 cup soy sauce
2 tbsp Worcestershire sauce
2 tbsp balsamic vinegar
2 cloves garlic, minced
METHOD:
Make the Marinate: 
Combine marinade ingredients in a zip-top bag.
Add the roast and refrigerate for 4–12 hours.
Remove and pat dry before seasoning.
Season the Roast
Mix all dry spices in a bowl.
Rub olive oil over the roast, then coat evenly with the spice mix.
Preheat oven to 135°C.Heat a pan over medium-high heat and sear the roast on all sides until browned (about 2–3 minutes per side).
Transfer to a roasting pan with a rack.
Roast uncovered until internal temp reaches 50°C for medium-rare (about 1.5–2 hours depending on size).
Remove from oven, tent with foil, and rest for 20–30 mins. Slice very thinly against the grain for max tenderness. Sprinkle chopped chives over top.
Serve with your favourite sauce or gravy and mashed potato and peas.
