Spiced Kumara with Whipped Chive Butter (Ko te Kumara Kakara me te pata Chive pata)

Ingredients: -
6 small orange kumara,
60g butter, melted,
2 cloves garlic, crushed,
½ tsp ground cinnamon,
2 tsp sea salt flakes,
Chive Butter: -
500g butter,
1 Tbsp pure maple syrup,
2 Tbsp fresh chives, chopped, and extra to serve,
METHOD: -
Preheat oven to 220°C (200°C fan-forced). Line two large oven trays with baking paper.
Wash the kumara, they will be easier to work with, slice a small piece from one side of the kumara so they sit flat. Slice down the kumara diagonally at 1cm intervals, stopping before you reach the bottom of the kumera, so you do not cut all the way through. Place the kumera on the oven trays.
In a small bowl, combine melted butter, garlic, cinnamon, and sea salt, brush the kumara with the butter mixture and roast in the oven for 45 mins or until brown and tender.
To make the whipped chive butter, beat the butter in a small bowl with an electric mixer until it is light and fluffy. Gently beat in the maple syrup and chives.
Serve the cooked kumara on a platter sprinkled with the chives and serve with the whipped chive butter.
