
Ingredients:
1 rack of pork belly ribs, or baby back ribs
Marinade:
3 cloves of garlic, crushed
2 fresh red chillies, finely chopped
2 tsp smoked paprika
½ tsp dried chilli flakes
Sea salt & black pepper, freshly ground
4 Tbsp olive oil
Glaze:
2 Tbsp honey
Zest & juice of 1 orange
Zest & juice of 1 lime
METHOD:
Preheat Oven to 180°C.
To make the Marinade:
Pound garlic, chillies, paprika, chilli flakes, salt, and pepper into a paste.
Mix in olive oil to form a marinade.
Rub the marinade all over the ribs.
Place ribs in a roasting tray, cover with foil, and roast for 20 mins.
Prepare the Glaze:
Mix orange and lime juice and zest with honey.
Glaze Ribs and Roast Again:
Remove foil, brush ribs with the glaze.
Increase oven to 190°C and roast for another 25 mins, basting occasionally.
Let rest for a few mins, then slice and serve with hot fries and your favourite sauce
