‘Sharing a Cup of Tean & Cake with Whanau during Matariki’
Ingredients:
450g sultanas
284g sugar
1 tsp vanilla essence
3 eggs
1 tsp baking powder
227g butter
METHOD:
Cover sultanas with water in a small pot and boil for 5 mins.
Strain off water, add hot sultanas to the butter and mix well. Add sugar, eggs and vanilla essence and beat together, add flour and baking powder and mix all together.
Pour into a grease and lined cake and bake in the oven at 177°C for around ¾ of an hour.
