‘Sharing a Cup of Tea & Cake with Whanau during Matariki’
Ingredients:
450g sultanas
340g flour
250g butter
284g sugar
1 tsp vanilla essence
3 eggs
1 tsp baking powder
METHOD:
Cover sultanas with water in a small pot and boil for 5 mins.
Strain off water, add hot sultanas to the butter and mix well. Add sugar, eggs and vanilla essence and beat together, add flour and baking powder and mix all together.
Pour into a grease and lined baking tin and bake in the oven at 180°C for around 45 minutes or until a skewer comes out clean.
