Crispy Roasted Pumpkin & Watercress Salad

A lighter, seasonal dish reflecting growth and renewal.

Ingredients
2 cups fresh watercress
2 cups pumpkin, cubed
2 Tablespoons of olive oil
1 Tablespoon of vinegar or lemon juice
Salt & pepper
Sliced avocado (optional)
METHOD
Roast pumpkin at 200°C for 25 mins.
Toss with watercress and dressing. Add sliced Avocado (optional)
Serve warm or cold.
