Matariki Biscuits

Ingredients:

For the Biscuits:
1½ cups plain flour
⅓ cup caster sugar
½ tsp vanilla essence
150g butter (room temp)
Decorate:
Icing, made from icing sugar, a few drops of water or milk, and choice of food colouring
Edible glitter or sprinkles
Icing sugar for dusting
METHOD:
Set oven to 180°C. Line a baking tray with baking paper.
Sift flour into a bowl. Add sugar and vanilla.
Rub in the butter with your fingers until the mixture resembles breadcrumbs.
Knead into a soft dough.
Put dough between two sheets of baking paper to about 5mm thick.
Use a star-shaped cookie cutter to cut out biscuits.
Place on the tray, spaced slightly apart.
Bake for 10–15 mins or until lightly golden.
Cool on a wire rack.
Decorate:
Mix icing sugar with a few drops of water and fun food colouring to make a smooth icing.
Spread or pipe onto cooled biscuits.
Add sprinkles or edible glitter while icing is still wet.
