Rewena Bread

‘Add this Bread to your Matariki Feast’

Ingredients:
3 cups plain flour
2 tsp baking powder
1 tsp salt
1 cup, cooked, mashed potato
1 Tbsp sugar
1 cup warm water, more or less
METHOD:
Preheat oven to 180°C Grease a round loaf tin or baking tray.
In a large bowl, combine flour, baking powder, salt, and sugar.
Add mashed potato: Stir in the mashed potato until well distributed.
Add water gradually: Pour in warm water a little at a time, mixing until a soft dough forms. You may not need the full cup.
Turn the dough onto a floured surface and knead for about 5 mins until smooth.
Shape into a round and place in the tin. Bake for 35–45 mins or until golden and sounds hollow when tapped.
Cool and serve: Let cool slightly before slicing. Delicious with butter, treacle, jam, or stew.
