Yummy Stuffed Potatoes
Ingredients:-
4 medium potato’s
¼ cup cubed butter
1 cup sour cream
1 cup cheddar cheese (shredded)
4 bacon strips (cooked)
3-4 sliced green onions
METHOD:-
Bake potatoes at 190 C for 1 hour or until tender. Cool slightly.
Cut each potato in half lengthwise. Scoop out mash, leaving a thin shell. In a large bowl, mash the potato with butter. Stir in sour cream, cheese, bacon and onions. Spoon into potato shells.
Place on a baking sheet. Bake for 30-35 minutes or until heated through.
Serve with sour cream.
